Harvest Salad From The Juiciest Fruit

Coree from The Juiciest Fruit has whipped together a nutrition packed harvest salad that is slam dunk delicious. One of our favorite things about Coree is how simple her food is. You don’t necessarily have to have every single ingredient listed below. She also recommends experimenting with different veggies. Buy something in the produce aisle that you’ve never tried before. You can also throw in vegetables that you already have in the fridge and don’t quite know what to do with them.
This is the first of five awesome new recipes we will be sharing as part of the FlowLIFT and Yoga Challenge that starts on January 11th. Check back every Sunday for a new dish to try for the week ahead!
Ingredients for Harvest Salad
Dressing
1 cup hemp seeds or 1/2 cup cashews
1/2 cup water
2 tbs olive oil
4 tbs fresh squeezed lemon juice
2 tbs apple cider vinegar
4 crushed/diced garlic cloves
1 tsp salt
2 tbs nutritional yeast
Put all the ingredients in a blender and blend until smooth.
Lasts for up to three days in fridge.
Salad
broccoli or broccolini florets chopped bite size
purple cabbage, shredded
red onion, thinly sliced
radish (regular, French or watermelon) thinly sliced
carrot, peeled or shredded
salted, roasted seed of your choice (pumpkin, sunflower, hemp)
Throw all the salad ingredients in a bowl and toss in enough dressing to completely coat everything.
Don’t drown the salad, but definitely nicely coated.
Have fun experimenting with this recipe. Try different vegetables and seeds, don’t be afraid to add your own flare. The surest road to being a healthy eater is using your own intuition and having fun with different foods. The dressing can be made with less water to use as a dip on an appetizer platter. Use all of Coree’s recipes as a launch pad of enjoyment for a clean and healthy diet.
