Hey FlyBBabes! You are almost half way through the FlowLIFT and yoga challenge. Congrats on your dedication and we know you feel amazing since we’re doing it right along with you. Coree whipped up this detox soup for you to give your digestive system a rest.
When we say “detox” we don’t mean “starve yourself for three days.” Coree’s intentions behind the idea of detoxification is to give the body an opportunity to do it’s own natural cleansing magic. When the body isn’t busy breaking down sugar, alcohol and other unnecessary items, it’s able to work at full capacity. This soup is nutritive and will leave you feeling satiated but not overly full. It’s a wonderful complement to a full meal (maybe pair it with the roasted chicken) or all by itself.
Ingredients for Detox Soup
2 medium leeks sliced into rounds and thoroughly cleaned
3 garlic cloves minced
2-3 cups vegetable stock or water
1 medium celery root (celeriac) peeled and chopped
1 tsp fresh thyme leaves
1.5 tsp lemon juice
2 tbs olive oil
Sauté leeks in a large pot with oil & a pinch of salt until soft but not browned.
Add garlic, thyme and celery root (another pinch of salt & ground black pepper) and sauté 5 minutes on medium high heat, stirring occasionally.
Add broth and bring to a boil.
Once boiling, cover and turn heat down to a simmer for approximately 20 minutes, or until celeriac can be easily pierced with a knife.
Let cool for a few moments and then ladle into your blender and blend to preferred texture, maybe all the way to a creamy bisque.
Place back into pot (maybe a few blenders full) and let simmer for another couple minutes, adjusting S&P to taste.
When serving, top with a drizzle of olive oil, a few thyme leaves and a nice squeeze of fresh lemon.
