White Light Salad with The Juiciest Fruit

It’s harvest season and time to dive into local, seasonal vegetables. This week The Juiciest Fruit shakes up your veggie drawer with some unexpected combinations. One of the many reasons we love Coree is she helps us to step outside our usual go-to’s.
You may be used to eating cauliflower and fennel roasted or grilled. But today we’re going all raw baby. The dressing is a labor of love and totally worth the time and effort. Watching her make this was like watching a chemist in a lab or a green goddess stirring up a cauldron in the woods under a full moon. So enjoy not just eating this delicious salad, but making it too.
White Light Salad with Coree from The Juiciest Fruit
1 head cauliflower, 1 head ramesco with florets thinly sliced
1 small fennel bulb thinly sliced
1/3 cup parsley, chopped
1/2 cup slivered almonds (toasting them would be fab)
2 oranges or grapefruits
3 tbs minced shallot
2 tbs rice vinegar
1/2 tsp Himalayan pink salt
1/2 tsp raw honey
1/4 cup olive oil
1/4 cup currants
Combine the cauliflower, ramesco, fennel, parsley and almonds together in a large bowl
Supreme the grapefruits/ oranges (Coree gives an excellent demo of this in the video)
Reserve the segments in a bowl. Then take the membranes and the peels and squeeze the rest of the juice into a bowl. Stir in the shallot, vinegar, salt and honey to the bowl of juice. Emulsify the dressing by slowly pouring in the olive oil as you stir the dressing around. Add the currants and let sit for 10-15 minutes.
Pour the mixture over the cauliflower and mix well. Gently fold in the citrus sections when it’s ready to serve. We let it sit in the fridge for a couple of hours and it was even better. So feel free to make a big batch and eat it for a day or two. It will just get better and better.
